Honey Roasted Plums



                                                                

OH MY GOODNESS...I absolutely LOVEEEE food!!! I could seriously talk about food all day! I have always had a true passion and appreciation for food since I was a little girl. Everytime we had free time at after school care, I would immediately gravitate to the kitchen play set area and pretend to cook meals for the dolls and my friends. And don't even get me started about my discovery of Food Network ( I think it was around 5th or 6th grade)! Bobby Flay. Emeril Lagasse. Giada DeLaurentiis. My list of my favorite Food Network chefs could go on forever, but maybe I'll save that topic for a future post.  Anyways...the intro above is basically my way of geeking out about my first ever food post!!! I am so excited to share this recipe that I have improvised for you guys. But before I share the recipe, I need to give proper credit to Mimi Ikonn on YouTube for her "What I Eat in a Day" video, which featured a scrumptious-looking roasted plum dessert that inspired me to make my own simplified version! Above is a short instructional video of the recipe ( I recommend playing it in 720 for better quality). You can choose to follow the recipe via the video or the written instructions down below!

                                                                                      So without further ado...



                                                                                            Ingredients:
  • 4 red plums
  • 1/4 stick of unsalted butter
  • honey
  • 1/2 cup of heavy whipping cream
  • 1/2 tsp of vanilla extract
  • 1 tbsp. of white sugar
  • vanilla yogurt (optional)
  • your favorite granola ( I used crushed honey & oats Nature ValleyⓇ granola bars)

                                                                                           Instructions:
  1. Preheat oven to 400℉/204.44℃
  2. Rinse the red plums off, cut them in half, and de-pit (oops I spelled this word wrong in the video) or remove the pits from the plums using a spoon
  3. Spray a baking sheet/pan with non-stick cooking spray unless your sheet/pan is already non-stick
  4. Place the plums evenly spaced on the baking sheet/pan. Top each plum half with a small slice of butter. Then drizzle a small amount of honey on top.
  5. Bake the plums for about 25 to 30 minutes or until the butter has melted and the plums are slightly soft and tender yet still firm on the outside.
  6. Now, in a small bowl, add your heavy whipping cream, vanilla extract, and white sugar. TIP: Before whipping it, taste the mixture & adjust the sweetness to your liking by adding more vanilla extract or white sugar.
  7. Whip the liquid mixture until SOFT ( in the video, I said "stiff" instead of "soft"/my apologies) peaks form (about 6-7 minutes). TIP: You know it has reached soft peaks when you are able to drop a little bit of the whipped cream and it stays on top of the surface instead of sinking into the mixture.
  8. Optional: I added vanilla yogurt to make the mixture a little bit more creamier and smoother, but this is a personal preference
  9. Remove the now delicious-smelling plums from the oven and allow it to cool for about 5-10 minutes or until it is warm, but not hot (something I did not do in the video because I was pressed for time but I HIGHLY RECOMMEND IT if you don't want your whipped cream to melt off)
  10. Once your plums have cooled off a bit, top each one with your whipped cream and favorite granola.
  11. Finally, drizzle the plums once again with honey and share with your family or eat it all by yourself. There's no shame😜 TIP: You can top the plums with mint leaves to give the dish a pop of color if you want to present it in a stylish manner or plan on taking photos of it.

Yay!!! My first food post! I hope you guys will give this recipe a try-it's just a random concoction that I thought of in my head and made into reality. When I made the dish, my family and I enjoyed it for breakfast but it could also make a delicious dessert as well. I was pleasantly surprise with the honey roasted plums. The butter and honey added a beautiful caramelization to the soft yet slightly firm fruit while the whipped cream gave it a delicate refreshing bite and the granola gave it a contrasting crunch.
